This is a Sixteenth (1/16) of a Cow. It weighs around 25 pounds, and the parts come from all subprimals (both front and back halves), but all cuts may not be available. To ensure you get all cuts you'll need to order an eighth or fourth of a cow.

Filet Mignon / Tenderloin, Rib Eye and / or New York Steaks: ~3 pounds
Sirloin Steaks: ~2 pounds
Roasts: Brisket / Chuck Roast / Cross-Rib / Rump Roast / London Broil / Sirloin Tri Tip Roast / Sirloin Tip Roast): 2-3 pounds
