Heritage Pork Belly

The underside or the belly of the pig. Usually used for bacon.

Heritage Pork Hocks (Cured)

Knuckle Marrow bones with meat on them. Known as Pork Hocks or Schweinshaxe (German). Cured and fully cooked. Hocks are Knuckle Marrow Bones with Meat.

Traditionally used for stock or thickening of gravy, but also as a stand alone dish.
