This is a Sixteenth (1/16) of a Cow. It weighs around 25 pounds, and the parts come from all subprimals (both front and back halves), but all cuts may not be available. To ensure you get all cuts you'll need to order an eighth or fourth of a cow.

You will see the following:

  • Filet Mignon / Tenderloin, Rib Eye and / or New York Steaks: ~3 pounds
  • Sirloin Steaks: 1-3 pounds
  • Roasts: Brisket / Chuck Roast / Cross-Rib / Rump Roast / London Broil / Sirloin Tri Tip Roast / Sirloin Tip Roast): 2-3 pounds
  • Steaks (Chuck Petite Tender, Eye of Round, Flank Steak, Flat Iron, Hanger Steak, Skirt Steak, Cross-Rib Steak,Short Ribs, Osso Bucco): 3-5 pounds
  • Ground Beef / Hamburger Patties / Stew Meat: 12-13 pounds
